2 Cups tomato sauce

1 cup tomato paste

12 oz beer (dark adds more flavor)

1 cup chicken stock

1 can light kidney beans

2 cans dark kidney beans

2 tbls butter
-
2 Anaheim chilies
-
2 poblano chilies

1 red bell pepper
-
2 jalapeno peppers

1 yellow onion

2 cloves garlic

4 slices diced uncooked bacon

2lbs ground chuck

Directions
Dice onions, peppers and chilies and finely chop garlic then set aside in bowl
Mix all dry ingredients together in bowl, mixing well, Half the mixture evenly and set aside.
In Dutch oven brown chopped bacon in on medium heat, be sure not to burn. Once browned remove bacon leaving the grease (use as a snack while you continue the chili)
To the dutch oven add butter, onion, peppers and chilies cooking on medium heat stirring occasionally until they become soft and onions are translucent then add garlic and cook mixture for 5 minutes.
Add the ground chuck, sprinkle half the dry seasoning in and stir well. Cook until ground chuck is browned all the way through.
Remove meat mixture from pot and deglaze with beer, cook for 5 minutes (this will help loosing all the drippings and remove the alcohol flavor) then add chicken booth, tomato sauce, tomato paste and remaining seasoning. Stir well and let simmer for 10 minutes
Lastly add the meat mixture back to the pot. Add the beans and turn heat to simmer placing lid on pot. Let cook up to 1 hour or place in crockpot. Pro tip cook the day before and reheat on low and slow for even better flavor.
Recipe Note
Serve the chili hot, garnished with the crispy bacon and your choice of toppings like sour cream, cilantro, diced tomatoes, chopped onions, or shredded cheddar cheese.
