Great information! I smoke a turkey in my homemade ugly drum smoker (UDS) every Thanksgiving and really should do it more than just on that holiday. One point I want to share is to be thoughtful about the size of the turkey you choose to smoke. You can really create a very dangerous bird to eat without proper planning. Regarding the frozen bird, as mentioned earlier, you really run a huge risk of incomplete cooking if you try to smoke it when it’s not COMPLETELY thawed. Secondly, it gets harder and even impossible to smoke a harmful bacteria-free turkey if you choose one that’s too large. There are posts all over the internet about this. I stick with no more than a 16 pounder on my smoker. A few years ago I put a 22 pounder on there and really risked letting the inside remain at a bacteria friendly temperature for way too long. I somehow pulled it off without getting my 35 guests sick, but the warnings are out there.

One a separate note, I think I may try the Poultry Palooza as an injection this year. I’ve never used it, but I’ve had a relationship with this company for many years and can personally vouch for both the people behind it and the products themselves. Both are the highest quality. I’m sure Poultry Palooza is the same.
