These pork street tacos are the perfect summertime recipe for your next barbecue or get-together. Ingredients
- 2 lbs. pork country-style ribs, trimmed and cut into bite-sized pieces
- 1/4 cup olive oil

Fresh pico de gallo, for serving

1/4 cup fresh lime juice

1 tbsp. Thriller Beef Rub

1 tbsp. cumin

1 tbsp. chili powder

½ tbsp. garlic powder

½ tbsp. onion powder

¼ tsp. cayenne pepper

Salt & Pepper to Taste

Directions
- In a large bowl, whisk together the olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Add the pork pieces and toss to coat. Cover and marinate in the refrigerator for at least 2 hours, or overnight if possible.
- Preheat your grill to medium-high heat. Thread the marinated pork onto skewers and grill for 10-12 minutes, turning occasionally, or until the pork is cooked through and slightly charred.
- While the pork is grilling, warm the corn tortillas on the grill or in a dry skillet over medium-high heat.
- To assemble the tacos, place a spoonful of the grilled pork onto each tortilla and top with a spoonful of fresh pico de gallo. Serve immediately and enjoy!
